VELLA SAMBAR


VELLA SAMBAR RECIPE: A sambar that is done without sambar powder,red chillies,coriander etc.Instead we use coconut,green chillies.This is a different version of regular sambar.As the name suggests it will not be white.It gets yellow color from the turmeric used.

This is not a recipe that we do in our home.I tasted this in my friends place.Got the recipe from her, tried and saving here in my blog as I liked the taste.As per her suggestion I used ladies finger.She uses black pepper while grinding and chillies while tempering.I forgot black peppers.I used chillies in both grinding part and tempering part.Depending upon the quantity of chillies used the taste differs.(It may be mild or hot)


Ingredients
Thoor Dhal
1/2 Cup
Ladies Finger
10
Green Chillies
5
Onion
1
Tomato
1 Medium
Coconut
2 tbl spn
Cumin Seeds
1/4 tsp
TamarindPulp
As needed
Mustard Seeds
1/4 tsp
Asafoetida
A pinch
Curry Leaves
Few
Coriander Leaves
Few
Turmeric Powder
1/4 tsp
Oil
As required
Salt
To Taste



Method:

1.Wash,Dry and chop ladies finger to bite sized pieces.
2.In a kadai add oil and saute ladies finger so that it gets rid of stickiness.Keep aside
3.Cook Thoor Dhal as we do for sambar.
4.Chop onions,tomatoes.Slit 3 green chillies.Extract pulp from tamarind.
5.Grind coconut along with 2 green chillies (or Black Pepper) and cumin seeds into paste.
6.Heat oil in a kadai.Temper with mustard seeds,asafoetida,curry leaves.
7.Saute green chillies,onions,tomatoes followed by ladies finger.
8.Add turmeric powder,salt and add dal along with water.Let it boil
9.Add tamarind pulp and wait till ladies finger gets cooked.
10.Finally add the ground paste and cook for few mins.Garnish with coriander leaves.
11.Serve with Idli,Dosa or Rice.
12.Cook 'n' Enjoy



Tip:
1.Saute ladies finger well in oil before adding it to sambar or it may make the sambar mushy.
2.Adjust the number of green chillies if you use pepper while grinding
