BANANA BREAD

Banana Bread Recipe - A tasty bread that is done with over ripe banana.This banana bread recipe will be an instant hit among kids.Well not only kids everyone will like its delicious taste.

This recipe was shared by my friend Suba and she got the recipe from her friend.Though the recipe is banana walnut bread,as I did not have walnuts I skipped it.She said that it is a fail proof recipe.This is my first experience of baking bread & happy that the bread came out soft,moist and fluffy.

 I had halved the recipe sent by her and I'm posting the same measurement and ingredients that I used.Adjust the quantity of sugar as per your preference.

A good method to use over ripe banana without wasting them.I placed the over ripe bananas in freezer and brought it to room temperature before using in this recipe.




Banana Bread


Ingredients
Banana

All Purpose Flour
1 1/4 Cup
Butter
1/4 Cup
Sugar
2/3 Cup
Egg
1
Curd
1/4 Cup
Vanilla Essence
1/2 tsp
Baking Soda
1/4 tsp
Salt
1/4 tsp



Method:



1.Preheat oven to 350 F.
2.Grease bottom only of 9 inch loaf pan.
3.Bring butter and bananas to room temperature.
4.Mash banana in a cup.
5.In a large bowl,mix butter and sugar.
6.Add egg and blend well.
7.Add mashed banana,curd and vanilla essence.Beat well until smooth.
8.Stir in flour,baking soda and salt.Mix well.
9.Pour into the prepared pans.
10.Bake in lower rack of oven for 40 mins or until toothpick inserted in centre comes out clean.
11.Cool for about 10 mins.Loosen the sides and place on the wire rack with top side up.
12.Allow it to cool completely (about 45 mins)before slicing the breads.



Tip:
1.You can add chopped nuts in step 8 if desired.
2.Wrap tightly and store in room temperature upto 4 days or refrigerate upto 10 days.
3.I did not use any blender.Just a plastic spoon to beat.Still it came soft.
