VEGETABLE CUTLET RECIPE - A favorite healthy recipe of all especially kids.Good way to include all possible vegetables in just one snack.Vegetable Cutlet can be a good starter,a good snack.
The recipe is my version of vegetable cutlet.After trying two to three times this recipe has come out well.As per my understanding,taste of the hotel style cutlet is from the quantity of bread crumbs used.I had little bread crumbs.I tried to coat all the cutlets with the available crumbs.Still it was not sufficient for the last one.So I just crumbled cornflakes and used it to coat the last cutlet.The taste was good too. From the show of Venkatesh Bhatt, I used sooji/rava also along with bread crumbs.That is the white crumbs that you see in the cutlet.

Method:
1.Boil Potatoes.Once cooked,peal the skin off and mash them.Keep aside.
2.Chop carrots,beans and pressure cook them for one whistle along with green peas.Drain water completely.Keep aside.
3.Finely chop onions and green chilli.Chop cashews.
4.Heat oil in a kadai.Add finely chopped cashews, onion,green chilli,Ginger garlic paste.Fry till raw smell leaves.
5.Add cooked vegetables and saute well.
6.Add turmeric powder,chilli powder,coriander powder,salt.Mix well.
7.To this add the mashed potatoes.Add garam masala powder.
8.Taste test and add salt or spice if required.
9.Mix corn flour with little water to make a paste.Mix Sooji/rava and bread crumbs together in a plate.
10.From the vegetable mixture take a lemon sized ball.Flatten slightly in your palm.
11.Slowly dip it in the corn flour paste and roll immediately over the sooji crumbs mixture.Handle the mixture gently to coat the crumbs and roll slowly to coat the sides.Here is where you give the perfect shape to the cutlet.Repeat this for all other cutlet.
12.Heat 1 tbl spn of oil in a tawa/pan.Place 2 to 3 cutlet on the tawa. Drizzle oil to the sides.When one side is browned flip it carefully.Drizzle some more oil and allow the other side also to get browned.
13.When the cutlet is browned evenly from all the sides, transfer it to kitchen tissue to get the excess oil drained.
14.Serve with Tomato Sauce.
