POTATO FRY / URULAIKILANGU VARUVAL


POTATO FRY RECIPE- Very simple yet spicy recipe.This recipe by default is liked by all.

Aloo Fry

Though this recipe is common and easy, saving this recipe here in my space as a collection.



Ingredients
Potato
4 to 5 Medium sized
Onion
1/2
Chilli Powder
2 to 3 tsp
Coriander Powder
1 to 2 tsp
Fennel Seeds
1/2 tsp
Mustard Seeds
1/2 tsp
Curry leaves
Few
Garlic
3 Crushed
Oil
As Required
Salt
To taste



Method:
1.Wash, Peal the skin off and chop potatoes to bite sized pieces.
2.Bring water to boil.Add salt and cook potatoes in it.Potatoes should get cooked but not mushy.
3.Drain water from potatoes and transfer it to a bol .Mix half of Chilli powder,half of Coriander powder and toss potato so that the powders get coated well
4.Chop Onions.Crush Garlic roughly.
5.Heat oil in a kadai.Temper mustard seeds, Fennel Seeds.Add curry Leaves.
6.Add potatoes and stir well.Do in Medium flame.
7.When potatoes get tossed the powders may get separated.Wait till the potatoes shrink in its size.
8.When potatoes shrink add some more chilli powder,coriander powder,salt and toss well for 3 more mins
9.Now the spices get coated well.Switch of the flame when brown spots appear on potatoes.
10.Tastes best when served with mild curries/rice,rasam,curd

Tip:
1.In the picture potatoes seems smaller because they shrinked.So make pieces accordingly.And use more potatoes if you need in large quantities.This will get reduced considerably after cooking.
2.While frying you add some oil if potatoes stick to the vessel.I did this in normal kadai.I did not use any nonstick vessel while cooking.Still it came out well.
