SPICY CHICKEN FRY/KOZHI VARUVAL


 The chicken fry is my aunt’s recipe and is one of my favorites. It tastes too good. Very less garam masala and the recipe is done mostly with chilli powder. Coconut slices being added finally brings unique taste to this fry.

 
Ingredients
 
Chicken
½ kg
Small Onion or Shallots
1 cup
Garlic
10 Nos
Ginger
2 Inch
Tomato
1
Big Onion
2
Red Chilli
2 to 3
Red Chilli Powder
4 tsp
Turmeric Powder
1 tsp
Coriander Leaves
3 Strands
Garam Masala
2 tsp
Curry Leaves
2 strands
Coconut slices
½ cup
Salt
To taste
Mustard Seed
To Temper
Oil
As Required

 

Method:
 
1. Chop Onion and Tomatoes
2. Fry small onions with little oil and grind along with ginger garlic.
3. In a pan add oil. When it is hot add mustartd, Red Chillies, Curry leaves chopped onion, tomato and fry
4. When onion turns transparent and tomatoes are fully cooked add the ground paste, Chilli powder, garam masal powder.
5. When the raw smell goes off add the chicken pieces and add little turmeric powder.
6. Fry chicken without adding water.
7. When chicken is half boiled add salt. Now chicken leaves water. To this add 1 cup of water and close with a lid and leave the stove in slow flame until chicken is fully cooked.
8. Finally add thin crunchy coconut slices and coriander leaves before switching of the stove and mix well.
