HOT AND SPICY CHICKEN

HOT AND SPICY CHICKEN-A variation from our usual masalas and spices.A creamy recipe that tastes too good with Chapathi,Kulcha and even Rice.

Real flavorful recipe.The garnish that is mentioned enhances the taste.I served this recipe with Kulcha.







Ingredients
Chicken
400 to 500 gms
Green Chillies
3 to 4
Ginger
5 to 6 cm
Curd
1/4 th cup
Coriander Leaves
A bunch
Fennel Seeds
1/2 tsp
Cumin Seeds
1/2 tsp
Onion
2
Salt
To Taste
Butter
A knob
Oil
3 tsp
Ginger
To garnish
Red Chilli
To garnish
Lime Juice
1 tsp


Method:
1.Chop the Chillies and remove the seeds.Chop coriander and reserve stems for garnish
2.Grind Chillies along with ginger,Coriander leaves and curd into very fine paste
3.In a kadai heat oil.Add butter.
4.When oil is hot enough splutter cumin seeds and fennel seed.
5.Add onion and saute till it turns soft and brown.
6.Add chicken and fry till it turns brown.Add some salt.
7.When chicken is sauteed well and brown spots appear add the ground paste little by little until each batch is fully absorbed by chicken.
8.Add very little water at the last batch of adding the paste.
9.Allow the chicken to get cooked by covering. 
10.Stir the pan to prevent the gravy sticking to the bottom.You can add warm water too if it sticks a lot. 
11.When chicken is fully cooked transfer it to serving bowl.
12.To Garnish-Cut Ginger and Chilli thinly lengthwise and mix with juice of lime 
13.Use this as a garnish with finely chopped coriander stems. 
13.Cook and Enjoy 





Tip:
1.While washing chicken I applied some turmeric and salt and again washed it to my satisfaction as followed traditionally
