KARA SEV/ KHARA SEV

Kara Sev-South Indian Snack that makes us munch again and again.

This is the first time I'm doing this snack.Making in small quantities is always easy. I will save the recipe only if it tastes good.I referred many sites for this recipe and there is no similar measurement that is followed.Only the ingredients are same but the quantity is as per our taste preference.Saving here the measurement I followed for reference.The texture was crunchy.Depending upon your texture preference you can increase or decrease the amount of rice flour.

Ingredients
Gram Flour
1 Cup
Rice Flour
1/2 Cup and 1 tbl spn
Garlic Paste
2 tsp
Chilli Powder
1 1/2 tsp
Pepper Powder
1 tsp
Ajwain Seeds
1/2 tsp
Asafoetida
A Pinch
Ghee
2 tsp
Salt
To Taste
Oil
To Fry



Method:
1.Sieve Gram Flour and Rice Flour.
2.Add Garlic Paste,Chilli Powder,Pepper Powder,Ajwain Seeds,Ghee,Asafoetida,Salt.Mix well.
3.Add required amount of water to make it like chapathi dough.
4.Keep covered with damp cloth.
5.Heat oil in a kadai.
6.When oil is hot enough take a long spatula that has many holes on it (Kannu Karandi) like the one we use for making boondhi.
7.Place it above oil at some distance*.Pinch a big lemon sized ball from the dough.Just scrape it on the spatula with your palm or fingers.(Whichever you are comfortable with.)
8.When the shh sound seizes you may take the sev out of oil and drain it in kitchen tissue.(There was no oil in tissue anyway)
9.Cook 'n' Enjoy


Tip 

1.You can skip spatulas and use the murukku press with small holes.Since this is my first time I wanted to try using spatula and it came out well.
2.*If the spatula is close to the kadai, sev may not be long.So keep it in some distance.Also keeping at distance may reduce the heat from reaching your hands.
