ADAI

ADAI RECIPE - A very healthy dosa recipe. With all the goodness of lentils, onion,garlic, drumstick leaves, coriander leaves it tastes the best.




Usually the adai can be made immediately after preparing the batter. But I prefer some resting time for the batter.I feel more heavy when the adai is made immediately.So I prepared the batter afternoon and made the adai in the evening.





Ingredients
Thoor Dhal
1/2cup
Moong Dhal
1/2 cup
Channa Dhal
1/2 cup
Raw Rice
1/2 cup
Idli Rice
1/2 cup
Red Chillies
10
Cumin Seeds
1/2 tsp
Fennel Seeds
1/4 tsp
Cloves
2
Cinnamon
1/2 inch
Onion
2
Garlic
3 to 4
Coriander Leaves
1 handful
Curry Leaves
2 strand
Drumstick Leaves
A handful
Salt
To Taste
Oil
As needed



Method:
1. Wash and Soak all dhals and rice together for minimum 4 hours.I soaked overnight.
2. In a grinder add just 1/4 cup of water ( as recommended by the manufacturer) and add red chillies,cumin seeds,asafoetida,cloves and cinnamon while running the grinder.
3.Drain water from the dhals, and add them slowly.
4.Grind batter such that it is not very coarse or very soft.Transfer it to a bowl
5.Let it rest for at least two hours( I prefer the resting time)
6. Chop onions,garlic,coriander leaves,drumstick leaves,curry leaves.
7.Add the chopped vegetables into the batter and mix with salt.Add water at this stage.
8. Heat dosa tawa.Drop a ladle of batter and spread it like dosa either thin or thick as per your preference.
9.Sprinkle oil round and on the adai.
10.When one side is browned flip and allow the other side to cook.Sprinkle some more oil to get it cooked well.
11.Serve hot with Avial or Coconut chutney.Also tastes best with jaggery and some butter.

Tip:
1.Fennel seeds,cinnamon and cloves are optional.but drumstick leaves are recommended as the aroma of these leaves adds a unique taste.I did not have drumstick leaves :( 
2.As we use lots of lentils and oil, asafoetida helps in digestion.
