HARIYALI KEBAB RECIPE- A very delicious,tasty,yummy kabob that you will want more and more.With the combination of yogurt mint dip....it is just a YUMMY food.For all the foodies who like chicken,here is a recipe that needs no fancy items.
Hariyali in Hindi means Greenery.This kabob is green in color and hence the name.Though I referred to the base ingredients of the recipe here, I have added some more ingredients and I have changed some steps according to my taste.This recipe will sure be a hit.
The chicken will be very soft when it is marinated for long hours.Overnight marination preferred.I did the oven settings as given below.Cooked at 350 F for 40 mins and increased the temp to 425 F for 10 mins.The chicken was very soft inside.You can set the oven temperature to 425 F even from the start.Then broiled at 500 F for 3 mins.This gives the preferred black spots for the kabobs.
Marination:
1.Chop the boneless chicken into 2 inch thick cubes.Wash well.
2.Grind together mint,coriander leaves,green chillies,ginger,garlic,cumin seeds.
3.Mix the ground paste along with curd,lime juice, pepper powder,salt.
4.Marinate the chicken in the prepared mixture overnight.
Preparation
5.Preheat oven to 350 F.If using wooden skewers soak in water for half an hour.
6.Chop onions,tomatoes,capsicum as 2 inch cubes.Drop the chopped vegetables in the marination and toss well to coat with the marination.
7.In the skewers, insert vegetables and chicken alternatively.
8.Place the skewers over a drip pan and bake in the preheated oven for 30 mins.(Drip pan prevents the oven from turning messy.)Rotate the skewers once halfway through.Check if the chicken is cooked in the mean time
9.**I followed this step while cooking.This step is optional. After 30 mins increase the oven temperature to 425 F and bake again for 10 more mins.
10.Once the chicken is cooked,drizzle oil over the kabobs and broil at 500 F for just 3 mins on the top wrack.This is to create the black spots on the kabobs.
11.Remove the skewers from the oven.Sprinkle chat masala powder over the kabobs.
12.Serve hot with Yogurt-Mint Dip.
