Carrot Pachadi or Carrot Raita
A quick, healthy and tasty Pachadi with carrot.Just three minutes and two main ingredients apart from tempering

Curd Salt Mustard seeds Urad dal Cumin seeds Red chilly Oil |
1 cup To taste 1/2 tsp 1 tsp 1/2 tsp 1 1/2 tsp |
Method:
1. Finely grate carrots.Beat curd without lumps
2. Heat a pan with oil.
3. Splutter mustard seeds,urad dal,cumin seeds, red chilly.
4. Add grated carrots and salt.Saute for a minute or two until carrot is just wilted( no need to cook carrots fully)
5. Add this to the beaten curd.Mix well.
6. Have it as such or with any rice

Tip:
1.Cooking carrots will make it more soggy.
2.Adding carrots directly to curd also does not bring full flavor.
3.Tempering and just waiting for a minute brings the full flavor of carrots. Don’t skip it.
